Grab a small, or mini, shallow pan on the stove and turn heat on low. Add butter and let melt. Once melted add both eggs. Do not stir or mix. Quickly, cover pan with a over sized plate to trap steam and heat. Allow the steam to cook out the raw egg on the top. At 10 minutes do a touch test and check if the white around the yolk is firmed up. Crack some salt and pepper on top for taste. Then slide out carefully on plate and sprinkle the chia seeds for flavor and nutrients, enjoy with pieces of pita bread :)
