Beef fillet and potatoe fondant

材料・調味料 (1 人分)
300g Beef fillet
1 potatoe
300g Peas
10 leafs of mint
250g beetroot (boiled)
200ml veg stock
10ml balsamic glaze
salt + pepper per taste
作り方

Sous vide the fillet for 8 minutes at 45°

Add 100ml of veg stock and the peas with mint in a blender and blend it.
once mix is complete take it out and pass it through a strainer and keep the thick linquid that results from this process. (same for beetroot puree, veg stock plus beetroot)

Use a mold to cut a perfect round with flat top and bottom potatoe, add a slice of butter on top of the potatoe then put it on a tray to bake for 30 minutes at 180°C (add veg stock to the tray to cover 2/3 ways up the potatoe)

Chop spring onion to garnish (optional)
ポイント

Use a wooden skewer to hold the butter on top of potatoe before and after it starts to melt
