Boil quinoa to perfection until there is a little crunch left in quinoa. set it aside.
mix all sauteed veggies in a pan and pour lemon and balsamic along with salt and cayenne and stir. it by slowly adding quinoa in the salad bix as you stir...finally add black beans and give it a stir.
Garnish the mix with cilantro per taste. Add lemon if required.
