Coming from a big family we never had any money but we always seemed to eat well. It wasn’t until I was in my teens that I realised the sacrifices my parents made to ensure we were well fed and happy. On Friday’s we ate ‘fish with mash or chips’, Saturdays we had ‘egg and chips’ or a ‘chicken curry’ and Sundays a ‘roast dinner’, always lamb or beef as they would NEVER serve chicken or pork on a Sunday.
Simmer for a minimum 3 hrs For the rest of the week it was a mix or ‘stews’, ‘ham hock and mash’ or local delicacies like ‘faggots and mashed potatoes with mushy peas’. As I recall there were plenty of beans and egg on toast too! It’s strange how you don’t realise the poverty with good parents.
Anyway, enough of the back story, today is my take on my mom’s ‘lamb stew’. Mom would start cooking the lamb after she got us off to school and it would be cooked all day until it was tender and delicious. Always the cheapest joints, but all we could taste was a tasty, filling comfort food when we got home from school.
This version includes a glass of red wine and leeks which are my little twist. But the rest is purely mom’s recipe and at less than 500 calories per serving its not only comfort food its healthy to boot!.
