Mexican barbacoa - Mexican slow-cooked lamb barbacoa.
One of my favourite meat for tacos.
It is just so tender and flavourful, even aromatic, as the marinade and banana leaf somehow get rid of that strong lamb smell.
Ready to serve it in a tortilla, Garnish just with chopped onion and cilantro with the Mexican sauce of your choice, without forgetting to squeeze the juice of a fresh lime wedge to add sharpness.
Try to cook it at home, you will love it, even if you don't like lamb, I am sure that you will like or like this.
Also don't forget the juices collected on the bottom of the vapore pot, serve them with pain white rice, cooked cheakpeas and fresh chopped onion and cilantro. Again, with a squeeze of fresh like juice.
