Wash properly the zucchini. Cut the half zucchini into julienne and simmer it in a non stick pan ... don't forget about the cover!😂 After 10-12 minutes, when the water will be totally evaporated, add some salt (as your tastes) and turn off the fire.

Clean the mushrooms and wash it rapidly. After cut them in medium pieces, put it in a non stick pan and simmer it the same way of the zucchini. After 8-10 minutes add salt and let them cook for 2 minutes more at low heat, then turn off the fire.

Get rid of the eventual water still in the mushrooms' pan and add the zucchini. Toss them with some olive oil, if needed add salt.

As regards the eggs: Add some water in a pot, with a spoon of white vinegar and half spoon of coarse salt. Make it boil. When the water starts to boil, make a little tornado with a whisk and cook one egg at a time by placing it in the middle of the

tornado. It has to cook for exactly 2 minutes, so be sure to use a timer. Pull it out with a strainer. Do the same with the other egg. Now you have to enplate.. use imagination!😉
