The dough
Water

Sun flower oil (vegetable oil)

Soft flour

The syrup
Sugar

Lemon sliced

Syrup:
(The best to prepare a day in advance because it should be totally cold).

In a sauce pan, pour sugar and water, stir and bring to a boil. Cook for 10-12 min, add lemon slices, take off the stove and cool before putting in the refrigerator.

Dough:
In a large pot pour water, oil, salt and sugar and bring to a boil.

Remove from the heat and add flour. Stir vigorously off heat for 2 minutes till you get shiny dough. Let cool for about 10 minutes.

In a separate bowl mix eggs and stir in the dough. Mix well using a whisk till you get a compact sticky mass.

Fill the pastry bag with a thicker tip.

In a deeper frypan (25cm in diameter) pour in 1 liter of vegetable oil. Squeeze out the dough, about 10cm long into a cold oil. Leave enough space between the pastry because they will gain volume. Control the temperature of oil. Turn when they get golden brown colour.

Once fried, immerse them in cold syrup.

Leave the oil to cool for 10 minutes before you fry the next batch. When the second batch is done, place the pastry on the baking tray, and immerse the first batch in the syrup. You will have about 4 batches with 10 pastries each.

When all 4 batches are done, place everything on the baking tray and pour the remaining syrup over it.
