To: marikoszk thank you,wanted to use 丸なす,but all I could find is these small local eggplants,but not exactly round,but they look good in this dish, and taste alright too!
To: yamako45 yes,deep fried first,and then steeped in だし+淡口しょうゆ for a few hours,then I used this dashi make そぼろafterwards.I am glad you like this,thanks so much for the resnap too!

To: mcg1990 hi there,for the tofu,you could put sesame oil or ra yu(chili oil),my dried shrimp is quite salty,so no need to put salt.For chicken soboro,fry minced ginger,add chicken,then chopped white negi,light soy sauce,sake,mirin,then dashi,braise til tender,adjust seasoning,then this one needs t
