Pâté 和 terrine 有很講究食材,工序的類型,也有像這種農家風的一種。偶然在超市見到一大堆像豬舌,豬頭肉,豬鼻,豬耳又平又不甚受歡迎的材料,買下來回家加些香料蔬菜等,放入庄力鍋內燉至酥軟,去骨切細,加些湯伴勻放入模內凝結便可,一般程序而已,明膠片也不須,配搭隨便選擇些喜歡的也可!不好意思,說多了!
猪舌这里没卖生的,有加工过的,耳朵有,造你这么说,我想起以前做过一道把猪脚煮烂后去骨,放冰箱凝固有点象^_^
虽然挺发时间好吃极了。

做這個的時候,用了頗長時間在壓力鍋內燉煮,所以肉很軟,骨頭也很容易挑出來的,凝結後口感也會特別好。不過不打緊,有興致才做吧!
