This is one of the most simple, savory and healthy dish that I love to cook quite often. I was not fond of bitter melon when I was young but now it's one of my favorite vegetable because it seems to balance my over eating of foods that are too salty or too sweet. It's quick to prepare just sauté it with onion, garlic and tomatoes. Then add some bitten eggs. It's very popular and one of the favorite dish here in the Philippines.
