Loco Moco Rice Burger

rice patties:
japanese sushi rice
2 rice cup
tomato

ground chicken thighs

soy sauce

worcestershire sauce

karashi mustard

gravy:
chicken stock
2.5 cups
olive oil
3 tbsp
all purpose flour
5 tbsp
sunny side up

sesame oil
for frying
shitake mushroom diced

lets make rice patties: prepare the rice as usual by washing it. place the rice in a rice cooker pot and add in water as indicated in the pot. remove 6 tbsp of water, add in salt, pepper, olive oil and mix well.

remove the stem of the tomato and place it in the middle of the pot. place the pot into the rice cooker and cook. when it's done, toss the rice lightly.

scoop out rice and place it into greased burger patties maker and press into patties shape. heat a pan with sesame oil and gently place the rice patties into the pan. once golden brown, flip and cook for about 2-3 mins. continue this step until all your rice is used up, about 8 patties.

lets make chicken patties: in a frying pan over medium heat, heat some sesame oil. add in onions and garlic. stir fry till onion translucent and set aside

in a large mixing bowl, add in ground chicken, egg, panko, soy sauce, worcestershire sauce, karashi mustard, the fried garlic and onion, salt and pepper. mix well with your hands. careful not to overmix. form into 4 patties

heat frying pan over medium heat with sesame oil. gently drop in the chicken patties. once golden brown, flip the patties and cook about 3-5 mins. remove and let rest. immediately season the patties with cayenne pepper

now lets make gravy: in a sauce pan over medium heat, add in olive oil and just 3 tbsp of flour. stir to prevent burning and turn slightly brown. add the remaining flour and stir to combine. once its combined, add in chicken stock 1 cup at a time. stir to combine. keep stirring as adding in the stock or it will burn. add in mushroom

continue stirring the gravy until it reaches the thick consistency that you want. do not overcook the gravy or it will becomes too thick

now lets assemble the burger: place rice patti in a plate, top with a chicken patti, spoon the gravy over the chicken, top with some sunny side, top with furikake, top with rice patti and finish it off with furikake. voila! awesome loco moco rice burger!
ポイント

always ground your own chicken. you can chop the chicken thighs with a chopper or blend it up in a blender

you can find karashi mustard and furikake in Japanese grocery store. karashi mustard is a hot mustard and furikake is bonito flakes with seaweed

you need to use a burger patties maker to make the rice patties if not the rice will fall apart when handling

I decided to take this Hawaiian cuisine and mix it up with Japanese style. Kinda like a fine line between Hawaii & Japan burger... Damn, this burger taste so insanely yummy!

Ya, I know this contains tons of carbs & calories and I am not asking you to eat this everyday. But seriously give it a try a
