Cook bacon on medium high heat, till golden brown and crispy. Set aside.

Wash and dry spinach. Chop in to bite size.

On medium heat. Sauté onion with a little bit of olive oil then add garlic and chopped spinach stir till cooked.

Add salt and pepper to taste, then add your cream and stir till the mixture become thicken. Add bacon. Remove from a pan to cool down.

Preheat oven at 200 degree C. Roll out your puff pastry. Cut in to 4 squares.

Fill each one with the filling and a half slide of cheddar cheese. Fold and pinch the rim tight. Brush with egg wash. Make a few cut on top to let the steam escape while baking.
