Take a mixing bowl Add Rava,curd,water,ginger-chilli paste .whisk well so no lumps are formed .and let it rest for 15 minutes. so that rava is soaked well in curd.

The batter should be thick but pourable, like idli batter To adjust the consistency, add more water if needed

After 15 min the batter is ready Now first prepare the dhokla pot .add 2 cup of water in pot . switch on the gas on high heat so the water start getting heat up.

Grease the dhokla plate with oil Take a batter add the soda into the batter. mix well. soda should be added just before streaming .

Now divide the batter into two portion for layers .

place the dhokla plate with the first portion of batter .close the lid of the pot .

steam the first layer of dhokla for 7 minutes . Remove the lid bring down the dhokla plate . spread a chutney over it with the help of the spoon.

pour the second portion batter .close the lid of dhokla pot & steam for 10-12 minutes.

After 10-12 minutes switch off the flame .Remove the dhokla plate and let it cool for 10 minutes

Now its time to prepare a tadka/ tempering for dhokla do not skip this step as this tadka adds so much flavor to the dhokla.

To prepare the tadka,heat the oil in a small kadhai or tadka pan then add asafoetida, mustard seeds ,sesame seeds,curry leaves, sugar, coriander leaves .

pour the tadka over the dhokla .serve warm or at room temperature.
