The process… Cut the squid bodies open so they lay flat as one piece. Gently score them, making sure not to cut all the way through. Keep the tentacles whole.
Make a marinade by mixing the olive oil, garlic, lemon, tarragon, dill, a pinch of salt, and some freshly milled black pepper. Combine the marinade with the squid and refrigerate for about 1 to 2 hours.

This recipe works best with a grill plate, like the one shown below. Place on your stove and bring to high heat. The squid will cook very quickly. Lay the squid bodies flat, turning them after about 20 seconds and cooking another 20 seconds or so. The tentacles need about 30 seconds to cook. Transfer the bodies to a cutting board and slice into thin strips. Garnish with a few sprigs of fresh dill and some black pepper.
