Pinoy Style Palabok ( Noodles in shrimp gravy sauce)

材料・調味料 (8 人分)
pork shoulder or chicken
1/4kg
cooking oil
3 tbsp
garlic, crushed
1 head
deboned tinapa(smoked fish)
1/2 cup
mama sita's palabok mix
1 pouch 57g
soup stock
2cups
water for cooking noodles
4litres
special bihon
1pack 227g
hard boiled eggs, sliced
2pcs
garlic for toppings,toasted
2tbsp
shrimps,boiled,shelled and halves
1/2cup
spring onions,chopped
3tbsp
crushed chicharon
1/2 cup
fish sauce to taste
作り方

Boil pork shoulder or chicken meat until tender,dice into 1/2 inch an set aside

In a wok, heat oil and saute garlic,pork,1/4cup smoked fish and stir in Mama Sita's Palabok(shrimp gravy) mix dissolved in 2 cups of soup stock. Bring to boil while stirring constantly

Lower the heat and simmer until sauce is thick. Remove from heat then set aside

Cook the Special Bihon: bring the 4litres and 2tbsp oil to boil then drop the noodles. Follow cooking instructions on pack. Drain and wash in cold water

Arrange noodles on tray. Pour sauce over and garnish with hard boiled egg and toasted garlic
ポイント

You may prefer not to put this on tray. Just put the toppings on individual bowls and make your own toppings. You may not combine the sauce and meat,smoked fish and put them instead on their individual containers and make it like toppings. Noodles,sauce,top with meat,smoked fish flakes, crushed chicharon,spring onions,egg then serve with fish sauce
