In a bowl, pour in the flour and make a small well. Add egg, salt, butter and slowly start adding water kneading using your hand. When you get a smooth dough, oil it and cover with a plastic wrap and let rest for 30min.

Meanwhile make the filling: combine the cheese, eggs and salt (if necessary). In a deep pot, bring 1l of water to a boil. Add a pinch of salt once boiled.

On a floured tablecloth, sprinkle flour and roll the dough to a thin filo pastry. Spread the cheese filling over equally, then roll in the dough in 13cm long parcels.

Carefully transfer the parcels into a boiling water and cook for 5min. Preheat the oven to 200C. In a fireproof baking dish, arrange the parcels and cover with double cream. Bake for 30min, till the strukli are golden brown on the surface.
