Preheat the oven to 220C. Put the whole peppers covered with olive oil in the hot oven and roast them for about 30min until they are well grilled. Turn over from time to time as they get charred.

Remove peppers from the oven and cover with a plastic bag, leave them to cool. Remove skin and seeds, cut the flesh into long thin strips.

Mix the dressing ingredients together, oil, pepper, salt, and the garlic and pour over the peppers. Allow this to sit in the fridge for at least a few hours to absorb the flavors. Stir occasionally. About 1/2 hour before serving take out from the refrigerator and remove the garlic. Add chopped mango and mix well to serve.
