Feet cuisine!
We Chinese have a thing about feet,especially from poultries,they might not be the prettiest to look at,but certainly taste really well.This is actually a Thai dish that I love so much,duck feet are braised in pork fat,oyster sauce,spices until very tender,and eat with some egg noodle
to soak up the delicious sauce.For those of you who live in Japan,duck feet are probably hard to find,but please look out for this dish if you travel to Thailand,I promise you will love it,that is if you could get over the thought of sucking some feet...

buy dried egg noodle in here(from HK's one) so I'd like to make some dishes with dry noodle instead of raw.(from your cook book)is it ok?

Here you go,the feet you'd like to see,in fact I've been wanting to make this,it's one of my favorite dish!
When I had the original one in Thailand,the noodle that they serve is very much like our "alkaline noodle",the fresh noodle that served with wanton in HK,that's what I bought too,but the photo
with that didn't come out right,in fact,I made this one for lunch the day after,with leftover duck feet,I ran out of fresh noodle and I used dried egg noodle(like fettuccini,but thinner),not so much bite as alkaline noodle,but still very good substitute,so if you couldn't find fresh one,dry is perfe
perfectly ok!I think it's replaceable for most other recipes too,may be slightly different result,but you could ask me anytime about what to replace best.

originate from the Chinese,especially from Chiu Chow Provence(潮州),also Thailand itself is very near west of China,so the cuisines affects each other.
