其實小時候吃的都是炒鴿鬆，但現在已很少見。若果找不到鴨肉，我想牛肉或豬肉還是可以的。做法頗簡單的，先炒熟青豆角，備用，再炒香薑米，下鴨肉，榨菜，香菇，沙葛，少量醬油，糖，鹽同炒，灒點米酒，下青豆角，原豉醬（麵豉醤），炒至乾身後放麻油便可。生菜（lettuce)浸冰水會特別爽脆的，請試試看！

This is a traditional Cantonese dish,usually done with pigeon meat,but not very practical for a family dish,just can't get too much meat from pigeon,so we substitute with duck.It will be great if you could get duck,otherwise I am sure pork is good too!
