Defreeze filo sheets in the fridge during night. Preheat oven to 200C. Spray oven dish with oil and put two filo sheets on the bottom. (Oven dish can be square or round).

Mix all cheese, 4eggs, 100ml of oil, sparkling water and yogurt in a separate bowl. Take two sheets at the time squeeze them with your hands and soak in the mixture. Don’t press them too much and leave on one side of the dish.

Repeat the process with all remaining sheets putting it one next to another. Leave two sheets for covering. Pour the remaining mixture on the top and cover with two remaining sheets.

Mix one egg with remaining oil, add little extra salt and spread evenly on the top. Bake for 30-40min until golden brown. Cut and serve warm. Eat with plain yogurt.
