Spinach and pumpkin salad with pomegranate;)

材料・調味料 (8 人分)
Pumpkin, seeded and peeled and cut into 2cm
800g
Salt & pepper
To taste
Olive oil
1/4cup
Salad spinach
2 package
Frozen or tin Mango
To taste
Avocados peeled and seeded

Vinaigrette:
Olive oil
1/4cup
Apple vinegar
3tbs
Honey
2tbs
Salt
1tsp
Black pepper
1/8tsp
Pomegranate
For garnish
作り方

Preheat oven to 200C. Line an oven tray with baking paper. Place the pumpkin on the tray and drizzle with olive oil. Season with salt and pepper. Bake in oven, turning occasionally for 20-30 minutes or until golden brown and tender. Remove from the oven. Place spinach and avocado in a large bowl. Add the pumpkin and drizzle with vinaigrette. Gently toss to combine. Sprinkle with toasted pumpkin seeds for an added crunch.
