Different from western ham,quite salty but deep flavor,good for many things,rice or soup etc,please explore it more! The pickle is 潮州咸酸菜(nothing to do with 榨菜),this one is the restaurant's homemade! About the 糭,main ingredients are mochi rice,pork belly,salt egg yolk,five spice powder.The yellow stuff is actually 綠豆,with the skin removed(before they dried),simply served with sweet soy sauce and sesame oil is the best! There is 花雕 too! Did you all enjoyed?
Makiko,about the ham,if you couldn't use it up in a few weeks,better cut up some and store in freezer,and that will last really long,the taste won't be affected too much! And about salt egg(咸蛋),it's important food for us,the steamed whole one is very humble food to go with rice and congee,and also could be made into many dishes,the yolk is especially useful,even seen in sweet things,like mooncake!Everyone love salt egg yolk here!!(Too bad not exactly healthy food...)
白菜と中華ハムのスープは火腿津白というそうです。あちらのハムってカチカチで、日本のものと全然違〜う!良い香りと美味しいスープが出ます。
その他、最終日の夜の潮州料理のお店で食べ切れず、ホテルで寝る前に食べなよ!と言われて持ち帰った麺のスナック。日本まで持ち帰りました(笑)
そして搾菜のような歯ごたえのピクルス。これ甘くてとっても美味しい。
チマキはこれまで食べたことがあるものと少し違う。芋?みたいなものが混ざっています。醤油ベースの味ではなく、シンプルで優しい味。
ハムは本当に使い道が沢山ありそう。日本のハムって偽物だなぁと感じます。長期保存できるように完全に乾燥させてあり、塩味も強いね。だからこそ良いスープが出るのだと思います。
salt egg yolk! ゆで卵の黄身かな?と勘違いした😅 そして芋かと思った黄色い粒々は緑豆だったのね。教えてくれてありがとう。

チョコレートの「茶」は中国茶なのね。そりゃそうだよね。日本には抹茶と組み合わせたチョコレートがあるけど、どちらもそれぞれ美味しいよね。抹茶のほうが香りが濃いから、わかりやすいかも!と思います。

ハムは小分けにして冷凍するほうが良いかどうか、迷っていたところです。半分くらい使って、残りは冷凍にします。
egg yolk は日本では生のままでうどんに乗せたりするから、使い方が違うね〜!興味深いです!
