Purple Cabbage Soup

レシピ
材料・調味料 (8 人分)
Purple cabbage, sliced
3/4 large head
Olive oil
2 tbsp
Onion, chopped
1 large/medium
Garlic, chopped
6 cloves
Carrots, sliced
4
Celery, sliced
4 ribs
Heirloom Tomatoes, chopped
2 medium/small
Button portobellos, sliced
6-8
Turmeric
1 tbsp
Tarragon, fresh, chopped
1 tsp
Beef Stock
2 cups
Water
6 cups
Parsley, chopped
Small handful
Salt & pepper
To taste
作り方

Sauté onion, garlic & red pepper in olive oil for 5 minutes. Add carrots & celery and sauté another 5 minutes. Add turmeric & tomatoes and sauté another 5 minutes. Add the cabbage and sauté another 5 minutes. Add the stock, water, tarragon, mushrooms, salt, pepper & bring to a boil. Reduce heat and simmer for 20 minutes. Add parsley, simmer another 5 minutes. Serve with white rice and soy sauce.
ポイント

Don't mix the rice into the pot of soup. Cook it separately then add it to your bowl with soy sauce then pour soup on top.
