Gather Loquats when they are full size, but still firm and only partially turned in color. Wash, remove blossom end & seeds.

Put prepared Loquats in a large pot, add lemon juice, and barely cover with water. Cover & simmer for 15 minutes or until pulp is very soft. Strain juice through a jelly bag or cheese cloth.

Measure 3 1/2 cups juice and pour into a large pot. Add pectin & stir well. Put pot over high heat & bring to a boil, stirring constantly. Add sugar & mix well. Stir until mixture comes to a rolling boil. Boil for 2 minutes. Remove from heat.

Skim off the top. Pour hot jelly into hot, sterilized jars & secure with hot, sterilized lids.

Carefully place jars of jelly into a pot of boiling water, the water should be one inch above the top of the jars. Cover & boil for 20 minutes.

Carefully remove the jars from the boiling water. Place on a towel and let them cool. In a few minutes you should hear a popping noise. This lets you know the jars have sealed.
