selfmade Spaghetti alla Pesto Genovese (with walnuts instead of pine nuts) #spaghetti #parmiggiano #pesto

2 hands / 80g

作り方

paste / pesto:

Wash the basil softly with cold water and dry it with kitchen paper.
For the Pesto you can use the leaves and some of the the stalk (if fresh and soft).


If you have a kitchen machine use it for all, or you use a mortar and follow step by step.

1) in basil (Mix or mortar)
2) a little salt
3) walnuts
4) grate parmesan in
5) add squished garlic
6) add salt if needed
7) add olive oil that it will be a paste

Cook spaghetti:

- boil water
- if it boil add 1 big spoon salt (it should taste like the sea)
- add 80-100 g spaghetti per person
(stand up like a Mikado and let it go, it should Fall apart all in a round and will sink in without clumps together)
- boil after remarks of the product (about 9-10 minutes)
- drain water and let legt 3 spoons of salt water inside
- serve the spaghetti on plates and some parmesan on spaghetti and the Pesto.
For finishing add a little olive oil and pepper and Fleur de Sel if you like.

- you could also put the Pesto in the pan with all the spaghetti and serve then
