White Rice/fried Plantain/ Garnish Stew(Ata Dindin)

Beef Tripe (Shaki)

For the rice
Wash you rice 3times in a clean water to reduce the starch. pour it into a rice cooker having some water and allow it boil for 25mint

To clean the smoke Fish
Boil some water then pour it on the smoked dry fish for 10 minute or more. This will make it clean and soft to eat. Change the water and clean again with water. Then bring it out into small sizes.

Wash your beef Tripe and gizzards in a clean water. Transfer it into a clean pot. Add salt, Maggie, curry, thyme and onion to give it a taste. Add some water. Cover and put on the cooker to cook for 30 minute. When done, dice it into small sizes.

For the Plantain
Pill out the outer layer, cut into small pieces. Add little salt. Pour some groundnut oil into the fry pan.when hot, pour in the plantain. Allow it fry until golden brown. Your fried plantain is ready to be served.

For the Stew
Clean all tomatoes, chilli peppers, green bell pepper, onions, garlic and ginger in a clean water. Cut into small pieces and pour it into a blender. Blend it on surface (i.e not smooth).

Put a clean frying pot on the cooker, add some oil. Allow it get really hot. Pour in some cut onion, then pour in your blended pepper. Allow it to cook for 10 minutes then pour in the smoke fish and diced beef tripe and gizzards. Add some salt, Maggi

Curry, thyme and any other thing you want to add. Cover it to cook for 30 minute. Ready to be served.
