Mung Bean Noodles

Mung Bean "Fettuccine"
1 1/2 cup
Carrot (Asian, not American)
1 cup
Mushroom of choice
1/2 cup
Garlic
3 cloves
Arugula
I cup (loose)
Organic Corstarch
1 teaspoon
Organic Soy Sauce
4 tablespoons
Ginger Root
1 tablespoon
Michiu
2 tablespoons
Sesame Oil
2 teaspoons
Sesame Seeds
1 pinch
Water
5 tablespoons
作り方

Boil mung bean noodles.

Mix cornstarch with michiu, water, soy sauce, and set aside.

Cut carrot into big shreds (julienne), mince ginger and garlic and fry in non-stick pan with sesame oil until lightly browned.

Add mung bean noodles, chopped mushroom, and arugula and the soy sauce mixture.

Stir vigorously until sauce becomes shiny like a glaze.

Turn off stove and let simmer over remaining heat until arugula slightly wilts.

Serve with sesame seeds sprinkled on top.
