Spinach and cheese pie;))

材料・調味料 (8 人分)
The dough: water
250ml
Olive oil
60ml
Vinegar
2tsp
Flour (強力粉)
550g
Salt
1tsp
Margarine-butte mix for greasing
150g
The filling: fresh spinach
1kg
Leek
3pcs
Large onion
1pcs
Dill
1bunch
Feta cheese
200g
Yellow cheese
200g
Egg
1pcs
Salt and pepper
作り方

In a bowl pour the flour and salt, mix well and add the vinegar and oil mixed with water(add 1tbs Sake) and knead well for 10-12min. Until the dough is smooth, soft and pliable. Leave for 30min to 1 hour to rest.

Divide the dough into two balls, one slightly larger.

Dust your working surface with flour and with the help of a rolling pin start with the biggest ball - roll out plastic oval about 35 x 50.

With a brush grease well the sheet with softened margarine - butter mix.

If you want your pie has 8 layers from down and 8 from upside fold inwardly on both side with the smallest diameter again above. If you want your pie to do with 12 layers the upper and naturally thinner, then fold both sides with the larger diameter inwards and one above the other.

Fold back the other two sides inwards and grease again with the brush.

Finally fold in both the dough by creating a folder in a sense. Now you are ready to roll out the folded dough with your rolling pin into a single sheet measuring approximately 40ch40 placing it with the help of a rolling pin on the mold ( well buttered). Remember to leave 3-4cm sheet protruding from each side of your mold in order to fold later your pie. The same process will follow for the top sheet. Put the dough into refrigerator for 1hour.

Filling:
Wash well fresh spinach. Dry. In a large frying pan heat oil and put chopped onion, fry until golden-brown colour on a high heat, add sliced leek, add salt and pepper and stew until half done. Cut spinach large pieces and add into the frying pan. Add a little more salt and cook until almost all the moisture evaporates.

Remove from heat and add crushed feta cheese and grated yellow cheese, chopped dill, oregano and 1 egg and mix well. Leave the filling to cool down.

Roll out a bigger piece of dough diameter 40cm and put into the well greased mold. Put filling in the dough and cover with the second layer also rolled out (diameter of the mold).
Pinch the edges of the layers together. Grease the top of the pie and sprinkle with sesame.
Bake in the hot oven 200C 35-40min.
