Roasted Risotto

材料・調味料 (4 人分)
Eggplant

Butternut Pumpkin
1/2
Capsicum

Arborio Rice
1 cup
Tomato

Kale

Vegetable stock
2 L
Chili flakes
2 tspn
Cumin
2 tspn
Garlic
3-4 cloves
Onion

Olive oil

作り方

Peel, dice and then roast eggplant, pumpkin, and capsicum. Peel the capsicum once roasted.

Finely dice the garlic and onion, add to pot on high with olive oil. Stir until soft, add herbs.

Add all of the rice and one ladle of stock at a time. Stir until mixed in. Repeat until rice is soft.

Mix in the diced tomato as a base (can omit)

Add in diced kale, mix until shrunk

Add in roasted veggies, stir

ポイント

Replace chill and cumin with any combination of herbs you like.
Kale can be replaced with spinach.
Mix and add roasted veggies as pleased.
