Chicken Rollatini with Arugula, Mozzarella and Parmesan, served with Brown Rice

The recipe is from skinnytaste.com, one of my favorite websites for delicious and healthy dishes. I highly recommend to everyone. I changed some things in the recipe, but it turned out great.
