Clean cauliflower and par boil for 3 minutes. Remove it from water and allow it to dry.

Grind the masala (green chillies, ginger, garlic, fenugreek seeds).

Add this ground masala, chilli powder, food color, salt and lemon juice into cauliflower and mix well. Boil a heavy bottomed vessel and add 3 spoons oil.

Put this cauliflower mixture into the boiling vessel. Stir the mixture occasionally and add small amount of oil as when required.

Repeat the process for 20 minutes with small to medium flame. Add coriander leaves after switching off the flame.
