Dutch Baby Pancake Babies

butter or margarine
1/4 cup
eggs
3
flour
1/2 cup
milk
1/2 cup
salt
1/2 tsp
vanilla (optional)
4 drops

Preheat oven to 400° F.

In the oven, melt butter in your choice of pan: 9" cake or pie pan, or 6 hole muffin tin. (Mind you don't leave it in there long enough to burn the butter.)

In a tall bowl or pitcher, beat the eggs just until they are blended, then add the milk, flour, salt and vanilla (if using) . Mix until blended and most lumps are gone. Batter will be thin.

Keep the pan on the oven shelf, and carefully pour the batter into the pan. Muffin cups will be 2/3 full.

Bake 20 minutes, but don't peek before 12 minutes!

Serve with maple syrup or powdered sugar or brown sugar or fresh fruit, or fruit compote or whatever your heart desires. Honestly savory filings would be terrific but maple syrup is so good I can't get past it!

They will be beautifully poufed up and golden brown when done, but will deflate before you can fill and serve them: that is normal.
ポイント

I bake them in a toaster oven. They come out a little dense and they don't fall as much.

Silicone pan will probably be fine but I haven't tried it.
