These Vietnamese fresh spring rolls are great for summer,and my favorite is this one,I rarely see this in a restaurant,I actually learned it from a cookbook.What special about these meatballs are that pork and prawn are used together,blended very smooth before shaped into a ball.So delicious!
This is the only meatball I know that has a pork and prawn mix,and may be with the pork fat,they really emulsify after the blending so smooth.Also I used nothing dark to season,only fish sauce,that why it has a pale colour.But this is delicious,my favorite filling for these Vietnamese fresh roll! Yes,all homemade,including meatball,but not difficult at all,just blend everything together till super smooth,you can do it.But I could share a secret ingredient,just with you.Ground toasted rice,dried toast jasmine rice in pan,then ground it,dead easy!
