Originally I was craving for a Portuguese duck rice that I had in Macau,but eventually I threw in all kinds of techniques and ingredients in it,Spanish,French,Chinese,Japanese etc,let's just call it my duck rice!
Yes,trying to make a Portuguese duck rice,but ended up like this.... I used French duck confit,Spanish saffron and chorizo,Japanese rice,and cooked it like Chinese(covered and steamed slowly on stovetop),but finished under the grill to make it crispy on top,all kind of ideas,but that's how I like it!
Yes,chorizo used,very mild ones,not spicy at all! No matter Western or Chinese,the theory is universal,put delicious cured sausage on rice,and we always have a great dish! I am more familiar with the water level when cooking rice the Chinese way,on stove and covered,so I don't need to worry about getting it wrong,super convenient like that!
