Take 25 gr of butter and let it stand for about 20 minutes. Then place butter, double zero flour and salt within a food processor and blend till becomes crumbs. Add water and blend in order to obtain a lumpy dough.

Shape the dough like a ball, envelop it with cling film and place it in the fridge for 2 hours.
Take 125 gr of butter and let it stand for about 10 minutes at ambient temperature.

Place the butter between two pieces of parchment paper and roll it out in order to obtain a square 10x10 cm wide.
