I had been doing stollen for two year,this year I wanted to challenge something new,I love Christmas pudding,it brings back childhood memories,but there were two things that stopped me from making it.First one was a main ingredient 'suet',a beef fat,all Christmas pudding recipe call for it,instead of butter,I couldn't get it here but this time round I found it.Second concern was the timing,proper Christmas pudding need to be steamed for 5-6 hours,I don't have that much time to sit around,I steamed it in a pressure cooker. It tastes good(all those dried fruit and booze!),texture just a little stiff,may be the steaming method or my expired baking powder...I will work on that.... Merry Christmas!

I love many British food,I had good memories eating this pudding,but it's the first time I made. I used pressure cooker to steam,much quicker,the small ones came out too stiff,the bigger one I just ate,and actually not bad! I felt stupid for awhile that I couldn't get your joke 😬...In HK we pretty much have the same main holidays as other countries,only Chinese New Year is different every year,sometimes January and sometimes February. Nothing special for me these days,I don't really celebrate anything,I prefer quiet life,and this year I have to work over Christmas too,but that's a long story...

I know to make this pudding needs huge effort😵 I've heard you have to steam half a day several weeks before Christmas, then wait till it mature and steam a few hours again on the day you want to eat. がんばりましたね😱

Thanks so much,it's my favorite time of the year,although I was busy,I had to make an effort!That's right,the flaming part is so special and fun,not crazy at all!! It's a lot of work,all the steaming,mature,and steaming again,I made some short cuts,I wasn't expecting them to be as good as the one I bought before,but the large one,which I saved for the last was really not bad,the right kind of texture and taste,after this one,I am more confident when I make them again next year!

反正白天沒時間做,就在夜晚拍的,氣氛更好。你知道我所有的照片也是用iPhone 拍的,但這種角度iPhone 做不到景深,用修相apps效果也不理想,唯有用單鏡反光相機,還要放上腳架。再加些後期製作,便成這張照片,總算過關!
