Take lamb out of pan and place in a deep casserole dish. Put in two cups of wine and bring to boil. Add all other ingredients and bring to boil and pour over lamb. Place in oven an cook for 2.5 hours on 140. Open second bottle if you hadn't already and have another glass of wine :)
Make some mashed potato with a hint of garlic and pepper and place lamb on top. Do not be afraid to cook for a long time best to cook long and slow. Enjoy :). Cheers Darren
I use rear leg lamb shanks from the butcher because they have more meat and cooking long and slow slow slow. they get very tender
