Slow cooked lamb shank with honey mustard rosemary red wine and garlic mashed potato

Hi yummy Mummy.
I use rear leg lamb shanks from the butcher because they have more meat and cooking long and slow slow slow. they get very tender

Ingredients
2 bottles Good red wine
4 Lamb shanks
6 Mushrooms
150 gmPumpkin
2 Onion
2 sticks Celery
4 Carrots
3 cloves garlic
800ml tinned diced tomat

You also need
2 spoons honey
2 spoons whole grain mustard
Fresh rosemary

Start by opening the bottle of wine and have a glass enjoy the next 4 hours of cooking

Cut onions celery and carrots up and place lamb on top roast in oven for 1 hour at 160 ha

Hahaha I might drink it all, get drunk and dont finished cooking.

Take lamb out of pan and place in a deep casserole dish. Put in two cups of wine and bring to boil. Add all other ingredients and bring to boil and pour over lamb. Place in oven an cook for 2.5 hours on 140. Open second bottle if you hadn't already and have another glass of wine :)

Make some mashe

Make some mashed potato with a hint of garlic and pepper and place lamb on top. Do not be afraid to cook for a long time best to cook long and slow. Enjoy :). Cheers Darren
