Always wanted to make this Australian snack,came up with this idea of using matcha and white chocolate
In the world of numerous matcha snacks,this one is much lesser seen,but I think matcha goes very well with coconut.
Compared to regular size lamingtons,I have made them into smaller wagashi size to go with the Japanese theme.

I am not familiar with Australian things,I only know these lamingtons from Starbucks,I heard they originate from Australia,and very popular there!I can see why!

Well,this is sweet but not overly sweet compared to all the wagashi,and you sure could control the sweetness by using unsweetened dried coconut for the coating.
I have never seen matcha lamington,and adding white chocolate makes a better coating I think,I am happy with this,it just came out the way I want,the recipe of the sponge itself is awesome!
You know what,I just found out Starbucks in Japan serve matcha lamingtons too,so I guess it's not very special after all...
