In a big, heavy bottomed pot, place one third cabbage, 1/2 pork, beacon and onion; that's first layer. Continue layering with the second third of cabbage, remaining pork, beacon and onion and finish with the layer of cabbage.

Cover with 1.5l of water, add salt and bring to a boil. When it boils, lower the heat, cover and cook on low fire for about 1.5-2 hours. (45min-1hour)

In the end add about 200ml tomato juice, marmalade (or 1-2tsp sugar), pepper, cook for a bit more. Taste to correct seasoning and leave to rest for about 10 minutes before serving.
