Cuttle fish and kujo scallion with mustard miso They finally stock kujo scallion 九条葱 in supermarket here. For you Japanese friends,it might be hard to understand what's the significance of this, the fact is that 九条葱 is much sweet, tender, and delicate in flavour, the scallion we get in our market is just not good enough for a dish like this.
Thank you for looking at my dish,Chibimaru San! I was extremely lucky to get hold of these,I love simple things served with 薬味,and these kujo scallion is my ideal type.I almost bought some back from Kyoto last time I was there, too crazy, right? Yes,vinegar was used, also 和からしand white miso.
Yes,てっぱえ,meaning 鉄砲和え from Kyoto,からし酢味噌,if I am not wrong.I actually had this dish before in Kyoto, and that's what it was written on the menu. I also came across ヌタ,I think it all the same thing but different regions call it differently,if it's confusing to a Japanese, you could imaging how's that to HK guy.😁

In your dish, did you add some vinegar to make the mustard miso?
とは初めて聞きました。
酢味噌ということは、こちらで「ヌタ」って呼んでいるお料理に近いのかな?
