Kueh Dadar (Sweet Nonya Crepe Roll)

fillings:
organic desiccated coconut

organic palm sugar roughly chopped

all purpose wheat flour

pandan leaves roughly sliced

lets make the filling: prepare a steamer. transfer the desiccated coconut into a plate. add in salt, lightly mix and let steam for 3-5 minutes. remove from steamer and set aside

in a sauce pot over medium-low heat, add in water, palm sugar and pandan leaf. bring up to a simmer, stir until the palm sugar has melted. do not bring it up to a boil. at this point, pour about 1/2 cup of the palm sugar syrup into a bowl and set aside. keep the remaining syrup in the pot

add in the steamed desiccated coconut. mix to combine well for about 5-8 minutes. remove from heat and set aside

lets make the crepes: in a blender, add in pandan leaves and water. blitz it up until it becomes a smooth paste. drain off the pandan juice into a large bowl using a strainer. discard the residue

in the same bowl, add in flour, salt, pandan paste and coconut milk. stir well to combine. the mixture should be like a damp sand texture. add in egg and oil. whisk until you have a smooth batter without any large lumps

if you have a crepe pan, use it. if not, you can use a non stick frying pan as well. heat the pan over medium heat. lightly coat the pan with butter. pour in 1/4 cup of the batter and swirl the pan to distribute the batter evenly across the pan

do not try to flip the crepe before it cook, or it will be torn. as soon as the edges of the crepe start to brown, it is okay to flip. it should comes off from the pan easily. flip the crepe and let cook for another 2-3 minutes. transfer to a plate and continue the remaining batter until all is cooked

once all the crepes are done, it is time to assemble. scoop a spoonful of the coconut filling and place in the middle of the crepe. fold the bottom of the crepe to the middle, tuck the filling tightly, roll, fold in the left and right sides of the crepe and roll it tightly. continue this process until all are done

serve the kueh dadar in a serving plate. drizzle the gula melaka syrup over the top. voila! kueh dardar!
ポイント

you can use ordinary all purpose flour if you don't have wheat flour. just make sure the protein content is below equal or below 10g.
