Zesty Sautéed Crown Daisy with Bacon and Burst Cherry Tomatoes.

Crown Daisy
A handful
Sweet Cherry Tomatoes

Lean Bacon - 10cm long

Chopped Fresh Parsley
1 TB
Salt
Black pepper
Water

Extra virgin olive oil

Heat the frying pan at medium heat.

Put in the lean bacon. Leave them to cook for a while. Don't over cook it. I prefer not to brown it in this case.

Add the cherry tomatoes and leave them to sizzle in the lean bacon fats. Swirl the frying pan once in a while. Cook til they are kind of baked and with some of them being burst open with the tomato juices oozing out.

Add in the chopped parsley and stir them. As crown daisy has a very distinctive aromatic flavor, a little amount of parsley is used as a hidden flavor instead.

Add crown daisy. Add in little salt to seal the flavor of the vegetables and saute. Add black pepper.

Pour some extra virgin oil over it before serving.

A light and refreshing dish for crown daisy lovers. It's zesty and aromatic. It's not meant to be oily. If there is too much fats from the bacon after cooking, please use a kitchen towel to soak some of oil up.

Please also take into account of how salty your bacon might be and adjust your salt seasoning accordingly.

The most important thing to note is to cook your tomatoes well for the dish to be good.
