Prepare the sauce by mixing the starred ingredients and set aside (soy sauce, water, cooking wine and sugar).

Cut the beef into strips, cutting it against its grain.

Marinate the beef for minimum of 15 minutes in cornstarch, soy sauce, cooking wine and sesame oil.

De-string the celery and cut it diagonally into bite size pieces.

Prepare the garlic by chopping it finely.

Heat the olive oil on high and fry the garlic first for a minute then adding the beef and cooking it until it changes colour. Set aside the meat and take the extra moisture.

Fry the celery in olive oil with some salt on high heat until it becomes brighter in colour.

Add the sauce to the celery and allow to boil for a couple of minutes.

Add the beef to the mix and cook for couple of minutes. Make sure that the meet is thoroughly mixed with the sauce and all the flavours are blended.
