Wash the calamari and cut into rings. You'd better dry calamari well. Warm up a pan with 2 tbs of olive oil and sauté the calamari a little bit so they can be softened.

To make the vinaigrette place in a bowl the sugar, rice vinegar, juice of lemon, and salt. Mix the olive oil, red pepper, and coriander. Place the calamari into the bowl where the vinaigrette was made, mix and place into refrigerator for an hour. Served chilled.
