Testaroli (Pasta) & Pesto Sauce

Testaroli is actually typical of the Magra Valley, the inland area towards Tuscany called Lunigiana. Testaroli resemble a thin, soft and light pancake made from wheat flour, salt and water. It is considered to be a type of pasta. The Testarolo cooks in a huge testo of cast iron then boiled in water, with added oil or pesto sauce.
