The dough: Cubed cold butter. Place flour, salt, butter in a bigger bowl, mix it with hands until butter is crumbled, then add eggs and make a compact round mass. Rest for at least half an hour in the fridge.
2
Filling: Separate leaves of spinach, wash it and put on the stove to boil, drain it after it was cooked. Cut in smaller bits. Place eggs in a bigger bowl, mix them well, add cheese, sour cream, spinach, one tbs of flour and add bacon bits(or mushroom) as you like.
3
Take the dough out of fridge and separate in two even parts.
4
Put a little bit of oil and flour in the mold.
5
Spread flour on the working surface. Using rolling pin spread one dough (this would be the upper covering dough) in circle to be the size of the upper part of the mold. Put the baking mold onto the dough and cut it in mold's shape and put it aside.
Preheat the oven to 180C.
6
Take another dough and spread it again to be a little bit wider than the size of the mold, then spread it into the mold so that covers it completely as well as the end. Cut the ends that went out of the mold. Place the filling inside.
7
Decorate the other upper dough as you like and place it on the top of filling.
8
Mix egg yolk with drop of milk and spread evenly on the top.
9
Bake for approx 45min until golden brown. Cover with cotton towel and leave it to cool down, cut and serve.
