Pandan jelly layer cake

材料・調味料 (8 人分)
Cake layer: Eggs

Milk + pandan paste
60g+ 1 tsp
Cake flour
90g
Cream of tartar
1/4tsp
Jelly layer: A)coconut milk
300g
Pandan water
400g
Sugar
100g
Salt
1/2tsp
Jelly powder
8g
B)Hoen Kwe flour
85g
Water

作り方
1
Cake layer to be complete and cool first
1. Mix egg yolk, 30g sugar, oil, milk, pandan paste together and sift in flour
2. Beat egg white and tartar together till no sign of liquid and add 20g sugar. Beat till soft peak and add remaining sugar beat till stiff
3. Fold in 1/3 part of beaten egg white into (1) mix well .
4. Add in the remain beaten egg white mix well
5. Pour the mixer into 7” round cake tin.
6. Bake at pre-heated oven at 160C for 35mins.
7. Cool the cake on a wire rack. Slice into 3 equal pieces.

Jelly layer
1. Put ingredients A in a pot cook it ; stir it till boil.
2. Mix the Hoen Kwe flour with water
Then pour it into the (A) in low heat stir it till The mixture thick & smooth

Assemble Cake
1. Pour some jelly mixture in mould. Spread and make sure all part are cover with jelly
2. Put a layer of cake and slightly press abit
3. Cover with jelly mixture again. Cover all area of cake
4. Repeat 2 & 3 till all jelly and cake use up
5. Refrigerate for at least 3 hour. Seve cold
