Crispy Roast Pork

Pork belly, skin on, square

Cook pork belly in a large pot of boiling water until 70% cooked (about 10 minutes). Drain and wipe dry with kitchen paper towel.

Pierce skin with a clean fork several times. Paint skin with some vinegar or lemon juice.

Score a deep cross across base. Rub seasonings (3 tsp salt, 1 1/2 tsp sugar, 1/2 tbs five spice, 1/2 tsp garlic salt, 1/2 tsp white pepper) into the base of pork belly.

Line a bowl with cling wrap, fill with 2 tbs of soy sauce and soy paste (optional). Leave pork into bowl with skin facing up. Cover sides of pork with cling wrap but expose the skin to air. Leave in fridge overnight.

Heat oven to 200C. Fill roast pan with water and place a rack on top. Pierce skin with fork several times. Rub 1 1/2 tsp each salt and oil onto skin. Place pork on oven rack.

Roast for 20 minutes then adjust oven function to 230C grill, and grill pork for 40 minutes or until pork turn to dark brownish colour.

Cut pork into stripes then chop into chunck.
ポイント

Pierce skin as much as possible for a crispy outcomes.
The original recipes use 2 tbs of salt to rub onto skin, I think it was too salty.
