Ratatouille

Egg plant (sliced)

Yellow pepper (sliced)

Red pepper (sliced)

Tomato (medium size)

Tinned tomato 400g

Crushed garlic
1 tsp
Dried oregano
1 tsp
Onion (chopped)

Olive oil
1 tbsp
Fresh parsley (chopped)
1 tbsp
Tomato paste
1 tbsp
Salt and pepper
Creme frache
300g
Olive oil spray
Crusty bread for serving
作り方

Preheat fan oven 180C.

Medium heat oil in fry pan, then put onion, garlic and oregano stir fry until soft. Add tinned tomato and tomato paste to medium slow heat cook for about 10 minutes.

Remove the sauce from heat and put the sauce in the baking dish evenly.

Layer all the vegetables in order, eggplant, yellow pepper, tomato, 2-3 sliced of courgette, tomato, eggplant, red pepper, tomato, etc. continuing layer all the vegetable in the same order and put them on the top of the sauce.

Scatter chopped parsley over vegetable.

Spray olive oil on vegetable and season with salt and pepper.

Cover the baking dish with foil and bake for 45-55 minutes or until vegetable soft.

Serve with sliced crusty bread and creme frache.
