兩面黄 - Shanghainese pan-fried noodles

egg noodles
5 portions
shrimp
12 pieces
pork (strips)
60gm
shiitake mushroom

6 stalks
soy sauce
1 Tsp
salt
1 tsp
white pepper
1/4 tsp
chicken stock
3/4 cup
ginger
2 slices
green onion
2 stalks
作り方

Marinate shrimps with a little salt and corn starch. Marinate pork strips with 1 tsp of soy sauce. Set both aside for 10 minutes.

Cook noodles in boiling water till it is just cooked. Drain the noodles. Mix it with some sesame oil and soy sauce. Heat wok with 4-5 Tsp of oil and pan-fry the noodles to golden crisp on both side, into a round flat piece. Put it on a plate.

Heat wok with 3 Tsp of oil. Fry ginger, green onion then add in mushroom, shrimp and pork. Stir fry till they are just cooked. Scoop up and set aside.

Use the pan to cook the egg into thin sheets. Cut it into strips.

Stir fry the vegetable. Add salt, soy sauce, pepper, followed by the soup stock. when boiling, add back the mushroom, shrimp, pork and egg strips. Thicken gravy with corn starch.

Pour the cooked ingredients on top of the crispy noodles and serve immediately.
